Making anything basic and normal into wow and rainbow colored automatically makes you awesome. Just ask my toddler. Letting your kids help you make rainbow cupcakes will make you the coolest mom ever. It’s so simple too!
What you need:
- White cake mix
- Food coloring
- Baking liners
Directions:
- Take your basic box cake mix and prepare it following the directions. (That was easy, eh?)
- Then, separate your mix into as many bowls as you want colors. I add 1/4 cup to each bowl until I eventually have none left. You can choose all colors and go with the rainbow or just pick a few. Whatever works for you- I’ve done it both ways. Add your food colors and mix well.
- Evenly pour each color into your cupcake liners. I just use a spoon and put a couple spoonfuls of each color into the liner. I don’t smooth it or anything, but if you are a perfectionist, go for it.
- Bake the cupcakes according to the package directions.
You can get your toddler involved by asking them which colors they’d like to use and then letting them stir the colors in. Bryson enjoys watching the cake mix turn from white to different colors.
To make ours extra-special, I added some Dinosaur Train cake toppers and whipped up a batch of green icing. I used cupcake liners with jelly beans on them, but we called them “Dino eggs.” Bryson got a kick out of it!
Next week, I’m sharing our rainbow pudding pops! Do you make things rainbow-licious for your kids?

This is so awesome!
I use icing dye from A.C. Moore (most craft stores that have a baking area have it) they have it in pretty much every color you could want in little jars. If i am going for a really specific color cake I can get it. If I am just doing rainbow or tye dye I use the box gel colors but if I am celebrating a holiday or a theme I do the icing dye. A jar lasts quite a few and the color is much more exact. My next adventure may be orange and black halloween cupcakes!
