Sloppy Joes

Sloppy Joes is one of my go-to meals.  I’ve used several different recipes, but this is the first time I’ve used NAKANO Seasoned Rice Vinegar.   You can cook them up quickly on the stove-top or throw it all in the slow cooker and enjoy a simple meal with very little effort.  Served with fries or potato chips- sloppy joes are always a hit here.  I never use the canned mix, because it’s too easy to make them myself without it.

Because I had never used seasoned rice vinegar, I was glad they sent along a booklet featuring 30 recipes.  I adapted this Sloppy Joes recipe just a tad by adding some ketchup, but other than that, I followed the book.  It turned out delicious and I used less ingredients than my usually sloppy joe recipe.  Nakano Seasoned Rice Vinegar is a no fat, low calorie condiment but is full of flavor.

Ingredients
  • 1 lb. ground beef
  • 1 Tbsp. chili powder
  • 1 green bell pepper, finely chopped
  • salt & pepper - to taste
  • ⅓ cup NAKANO Seasoned Rice Vinegar - Original or Red Pepper
  • 1 can (14 oz) stewed tomatoes
  • ½ ketchup
  • 4 hamburger buns
Instructions
  1. In a large skillet, cook beef over medium-high heat. Drain.
  2. Add chili powder, bell pepper, salt, pepper, and tomatoes.
  3. Stir in rice vinegar and ketchup.
  4. Cook until thickened.
  5. Spoon mixture on buns and serve.
Notes
This can easily be adapted for slow cooker use. Simply cook ground beef in a skillet and drain. Then toss all ingredients except the buns into the slow cooker and cook on low for 6 hours. Leftovers freeze well.

Deliciously Thick & Hearty Slow Cooker Chicken and Dumplings Recipe

I’m probably more proud of this recipe than any I’ve ever posted.  The slow cooker has been my best friend lately, but I couldn’t find a slow cooker chicken and dumplings recipe like I wanted.  I came up with my own instead and it was so delicious.  Seriously, the best I’ve ever had and I craved it the rest of the week.  It uses simple ingredients, but they come together to make this thick and hearty comfort food.  I’m not that great at explaining recipes, but this one is a keeper, so I hope you can follow along.

Ingredients

  • 2lbs Fryer Chicken
  • 2 1/2 cup reserved broth
  • 1 can Cream of Chicken soup
  • 1 can Cream of Celery soup
  • 2 tsp Parsley
  • 2 1/4 cup Bisquick (or something similar)
  • 2/3 cup milk

Directions

  • Bring a large pot of water to a boil and cook chicken until done.
  • When chicken is done, use tongs to set it aside until it’s cool enough to handle.  Do not pour out the broth!  Then, take of the skin and tear the meat into bite size pieces.
  • Add chicken, both cans of soup, broth, and parsley to your slow cooker and stir well.
  • Cook on high for 4 hours or low for 6 hours.  It won’t hurt to leave it on longer.
  • Combine the biscuit mix and milk.  Drop into slow cooker by teaspoonfuls and cook on high for 30 minutes or until dumplings are done.
