After 3 hours of fitful sleep, I decided to throw in the towel and face the morning... at 4:30AM. Considering that I am not a morning person at all, even I am surprised. It was just one of those nights where my brain refused to shut off. It was another beautiful weekend and a long one at that. I hope you had a fabulous Memorial day and took a bit of time to remember what it is really all about. We spent time with our friends and family at the campground, out on the boat, relaxing and chatting and grilling, making memories, and checking things off our summer bucket list. Sunday cereal snacks on the boat chicken wings, fries s'mores for dessert Monday up late, skipped breakfast hot dogs, cheese slices, & snacks at the river grilled steak, chicken, & sausage kabobs Tuesday scrambled eggs with cheese, strawberry smoothies macaroni & cheese, pinto beans, fish sticks (leftover kabobs for me) grilled pork chops, mashed potatoes, … [Read more...]
Weekly Meal Plan – May 20 – 26
Another beautiful weekend has come to an end. It was the best one I've had in a while.. Things are starting to fall back into place, if only bit by little bit. We spent the entire weekend with our family and friends at the river. We grilled Friday, Saturday, and Sunday. The kids played in the pool, the sun was shining, our family was together, and I could feel our hearts lighten. Bryson spent the night with Aunt Brandi Friday night then with his Nana & Pop Saturday night. He didn't like it when he finally had to come back home yesterday. The weekend ended with a few hours out on the boat, swimming, chatting, and enjoying the good company. Both kids fell asleep on the way home and were so tuckered out that they went right to bed. Justin and I watched a movie on Netflix before joining them. We had to force ourselves to stay awake because we were tired enough to go to bed at 8PM. our view from the boat Sunday This is going to be a busy week! We have three … [Read more...]
Meal Plan – May 13 – 19
Monday already!? It seems so! The weekend flew by for me. Friday evening, Justin and I did a little shopping while the kids were at the river with Nana and Pop. We picked them up later that night after spending some time at the campground with friends and family. Saturday, Justin got up early and built the kids a new water table. We spent most of the day at home. Later in the day, we had to make a trip to town and while there, we picked up some pallets to make the kids a water wall- can't wait to do that! Sunday was mostly a lazy day at home. We had a family dinner that afternoon which was wonderful. Since losing Kolby, our family has become closer than ever. We were already a close family, but everyone is really holding each other up right now. On the way home, we stopped by Kolby's grave. It was Bryson's first time and we let him sprinkle grass seed over his grave. Then, he said "I love you, Kolby." It was so sweet and heart-wrenching. Bryson … [Read more...]
Menu Plan – April 22 – 28
Hey y'all! I am back with a much needed weekly menu plan. It's been a while, huh? That past 10 days have been the hardest, most devastating days of my life. I'm finally beginning to accept that it really won't get easier and that I have to learn to work through this hurt. I think that I am also beginning to accept that Kolby isn't coming back. Yesterday was the first day that I haven't begged him to come back. I know that probably sounds crazy, but something in me thought that if I pleaded with God that he would let Kolby come back. My faith tells me that Kolby is in a better place, the same place I want to go, that he's completely happy and at peace. My faith tells me that God's plan is perfect, even when I don't like it at all. I believe those things 100% with no doubts and I don't think I could get through this without those promises. Even so, the selfish part of me just wants him back, wants to watch him grow up, wants to give him one more hug, wants one … [Read more...]
Meal Plan & Encouragement – Week of April 1
I keep this tucked into my heart and thought I would share it with you all. It's easy to look at other blogs and feel inadequate in comparison. It's important to remember that what you see is only part of the overall picture and it's usually the best part. I want to be a source of encouragement so I'm not going to share every complaint, how I snap at my children, or nag my husband. Do know that those things happen- more often than they should. What you see here is usually the BEST part of my life- not my whole life. :) That isn't to say that I don't keep it real, because I do share my trials sometimes, but I strive to keep things positive. With that said, on to the menu for the week! Breakfast -Biscuit & gravy, eggs, sausage -Pancakes, fruit -Eggs, toast, fruit Lunch -Leftovers -Mini pizzas -Peanut butter sandwiches, fruit -Grilled cheese, soup -Hot dogs, cheese cubes, fruit -Chicken fingers, mac & cheese, peas Snacks -Hard boiled … [Read more...]

We didn't have a thing planned, but I randomly decided to tackle our table & benches on Saturday. One coat of stain and a couple coats of poly-cryptic sealer and I'll be finished. I can't wait to share the final result! With that said, I'm ready to hit the hay so let's get on to the menu. Weekly Meal Plan – March 4 – 10
March? MARCH? Seriously? I cannot believe we are already in the third month of the year. Last week was the first week that I haven't meal planned all year. Losing Tucker put me in a funk, which explains the lack of posts. I published posts that were already in the works or that were easy to write, because my heart just wasn't in blogging last week. Our pantry and refrigerator were both bare too, so we threw together meals all week. Thankfully, we fixed that Saturday morning when we spent right at $300 on groceries. OUCH. I hope they last a while! For the first time, we focused on buying organic food, whole wheat and brown everything (from pasta and rice to bread), and tons of fresh fruits and vegetables. Our refrigerator is absolutely packed and I don't think we could fit anything else in it. It feels like a step in the right direction. Breakfast -Cereal (using up what's left- not buying more) -Freezer Friendly Baked Oatmeal (delicious!) -Waffles … [Read more...]
