I think it's obvious that I love pizza.  From homemade pizza to pizza muffins, pizza is probably my favorite food.  These began as pizza bites, then I started calling them pizza rolls.  My husband called them pizza dunkers.  You can call then whatever you want, because they are delicious.  I'm at the point in my pregnancy where instead of having cravings, I'm going through some major food aversions.  The sight of dinner in the afternoon sends me running to the bathroom and the thought of meat.. well, let's not go there.  But pizza?  Pizza still hits the spot and these homemade pizza rolls turned out wonderfully. When it comes to lunch, it has to be simple.  I actually have an alarm on my phone to remind me to get started on lunch each day, because without it, lunch would totally slip my mind.... until my kids begin screaming they are starving.  I don't mind spending an hour or so in the kitchen for dinner, but I want lunch to be quick, easy, and painless.  I also prefer to stay away from frozen foods and find healthier options.  Often, I'll do make-ahead meals or freezer cooking, but there are some days when I need to throw together a lunch with ingredients I keep in the pantry. I started drinking coffee at a young age.  My Gangan would always cook a big breakfast when I spent the night with her and she'd always fix me a cup of coffee.  No one could make coffee like her and I always looked forward to it.  I think it was more milk and sugar than anything, but it's one of my favorite memories.  I wanted "Gangan's coffee" and only her coffee.  I continued drinking my coffee with milk and sugar for years until I tried Coffee-mate French Vanilla creamer.  Now, I normally don't drink coffee at all if I don't have my Coffee-mate French Vanilla to go with it. We don't wait around for birthdays to celebrate.  There is something to celebrate in everyday and I work to remind myself of this frequently.  Even on the worst days, there is good.  This year has been a hard one full of losses and I think that means we should take time to appreciate each day now more than ever.  This week, we celebrated with easy peanut butter cupcakes topped with Cool Whip Frosting. To make these cupcakes, I simply took a boxed cake mix, followed the directions, then mixed in 3/4 cup creamy peanut butter.  Bake according to time on the box, allow the cupcakes to cool, and then finish off with the delicious Cool Whip Frosting. September means a few things around here.  The weather starts to cool down.  The days get shorter with the sun setting earlier each day and the leaves begin to change colors.  And the weekends revolve around football.  No ifs, ands, or buts about it- if there is game on, the men are tuned in.  We gather with my parents almost every weekend to either cook a full meal or whip up some tasty snacks for game time.  Dessert is mandatory. We shopped at Walmart for the new Snickers NFL Minis, but came up empty-handed and settled for the regular Snickers Minis.  I was challenged to create a delicious game day dessert using Snickers Minis and I knew instantly that peanut butter pie would be the way to go. The rainy weather put a big dent in our plans for the long Labor Day weekend.  We had planned to gather at the river like most weekends and have a cook-out.  Even though fall is here, we'll still spend a few more weekends at the campground with our family and friends so we still have a few opportunities ahead.  The rain didn't let up enough to even pull out the grill this weekend, so we were forced inside.  Our original plans were to recreate these wonderful steak, pepper, & pineapple kabobs we made back in May. Instead, we went with a back-up plan and threw a mini "cook-in" with my parents.  The great thing about this recipe from my mama is that is so versatile- on the grill or in the oven, it comes out delicious!  If you want to cook this on the grill, just follow the directions below, put it all in an aluminum grilling pan, cover with foil, heat the grill to 350 degrees, close the lid & let it bake until done, about 45 - 60 minutes is all it takes. 5.0 from 1 … [Read more...]

This Mississippi Mud Cake is out of this world delicious.  As soon as I spotted in the new Southern Living Classic Southern Desserts cookbook, I knew we had to try it.   My mama brought over some pecans just so we could make it ASAP.  Then Justin & I teamed up.  Well, I mostly read the instructions and he did all of the cooking since I can't stand for more than a few minutes.  Yes, I do know he's a good, good man!  ;) Here's the thing though- Justin doesn't like chocolate cake.  Crazy, I know, but true.  Something funny happened when he pulled the Mississippi Mud Cake out of the oven, assembled, and took a bite- he loved it.  He even called it amazing and one of the best things ever, then he proceeded to tell me not to make it too often, because that wouldn't be good for his figure.  (haha)  It has received two thumbs up from all of our taste-testers.   4.5 from 2 reviews Mississippi Mud Cake   Print Prep time 15 mins Cook time 36 mins … [Read more...]
