First off, I am so thankful Autumn is right around the corner. This summer has been so unbearably hot that cooking was out of the question most days. We ate up some freezer meals, grilled out, and cooked a few times. This weekend was beautiful and I am hoping to return to cooking most nights soon. I also plan to have my freezer stocked with meals before this baby arrives in January. I am shooting for at least 30 meals.

When we cook soups, stews, or chili, we make a large pot and freeze the leftovers. We always have enough for three meals.
I also keep a few batches of meatballs in the freezer and bags of sloppy joe mix. I will share a few recipes with you over the coming weeks.

>The pumpkin chocolate chip muffins sound delish! We love making chicken stir fry up ahead of time (I double a dinner and freeze half), meatballs, waffles, and baked mac and cheese. They all thaw out so easily!
