Here is an easy weeknight meal. It has simple ingredients and cooks fairly quickly. This is definitely a southern comfort food!
You will need:
2 large cans of chicken OR 1lb chicken, chopped
2 cans mixed vegetables OR 1 bag frozen mixed vegetables
1 can cream of mushroom soup
1 can cream of chicken soup
1 pack of buttered crackers (Ritz)
Directions:
Mix the chicken, vegetables, and soups in a large bowl. Pour into a 9×13 baking dish. Top with Ritz crackers and a few pats of butter. Bake at 350 degrees for 25-30 minutes.
As you can see in the photo, I did not top mine with Ritz. I realized I didn’t have any, so I decided to serve it with rolls instead.
See? I told you it was simple. This is one of our favorite meals, because it is delicious. If you shop sales and use coupons, this would be fairly cheap too. I know we have gotten frozen mixed vegetables and Ritz for free in the past.
