weekly menu plan // november 2

It’s been at least a year since I’ve meal planned regularly.  This year has been so chaotic that we’ve found ourselves eating a lot of fast and frozen foods.  This is the first year in many that we didn’t have a garden.  We had the land tilled and ready to prep then Dad was diagnosed and we knew we wouldn’t have time between him and Brynlee so we decided against it.  I look forward to it next year!  Now that Daddy has passed away and Brynlee is doing so well, I find myself ready for a routine again.  I have a lot of empty time on my hands that I haven’t had in months.  I am craving some sense of normalcy in my life.  I’m tired of the chaos and busyness and ready to be intentional with my time now that I have the opportunity.  For 10 months, I focused on getting Brynlee healthy, keeping her healthy, and taking care of Dad.  It’s time to get back to life and that includes cooking more often.

Since we just spent $500 on groceries, I am definitely going to cook this week!  Here’s what’s on the menu:

Breakfast

Cupcakes (yes, Bryson & Bella had leftover Halloween cupcakes for breakfast today!)
Eggs, Toast, Fruit
Cereal
Muffins
Yogurt, Fruit, Toast

Lunch

Chipotle Bacon Roll-ups
Bagel Bites
Toasted Sandwiches, Chips, Fruit
Pizza Rolls
Peanut Butter & Jelly Sandwiches, Fruit

Supper

Creamy Crockpot Chicken Alfredo (new recipe we are trying)
Mexican Chicken & Black Bean Filling served with tortilla chips
Baked Ham, Mac & Cheese, Mashed Potatoes
Chili
Pork Tenderloin, Green Beans, Baked Sweet Potatoes

Sweets

Cherry Cheesecake
No Bake Energy Bites
