We just got home from the beach yesterday evening, so I’m working on getting the laundry finished up and the house back in order. We had a fabulous time and I’ll have a post up later this week about our first vacation as a family of four. As far as the meal plan, it’s going to be a simple kind of week. My hubby has taken on a few side jobs for the next couple weeks. He’ll be working his regular hours and then later on into the night. He usually takes over in the evenings and is a huge help so I’m lost without him at night. To help keep my sanity and keep up with the kids, I’ll be relying on my Crock Pot and easy dinners.
- Eggs & Toast
- Hot Dogs (per Bryson’s request)
- Pizza Muffins
- Slow Cooker Chicken and Dumplings
- Slow Cooker Sloppy Joes
- Slow Cooker Enchiladas
- Slow Cooker Loaded Baked Potato Soup
- Southwest Skillet with Cornbread Topping
We are running low on several items, because I didn’t want food to spoil while we were away. I’ll have to make time to go to the grocery store sometime within the next few days. I may make my first grocery trip with both kids by myself.
What are you eating this week?
Here is my menu for the week:
Monday: Beef Stragonoff
Tuesday: Macho Nachos (Paula Deen)
Wednesday: Chicken Fajitas and sweet corn spoon casserole
Thursday: Sweet and Sour Chicken with rice
Friday: Date Night
Saturday: Disney Food and Wine Festival
Sunday: Dinner with in-laws
Sounds like a great week at your house. Have fun at the food & wine festival!
