This Mississippi Mud Cake is out of this world delicious.  As soon as I spotted in the new Southern Living Classic Southern Desserts cookbook, I knew we had to try it.   My mama brought over some pecans just so we could make it ASAP.  Then Justin & I teamed up.  Well, I mostly read the instructions and he did all of the cooking since I can't stand for more than a few minutes.  Yes, I do know he's a good, good man!  ;) Here's the thing though- Justin doesn't like chocolate cake.  Crazy, I know, but true.  Something funny happened when he pulled the Mississippi Mud Cake out of the oven, assembled, and took a bite- he loved it.  He even called it amazing and one of the best things ever, then he proceeded to tell me not to make it too often, because that wouldn't be good for his figure.  (haha)  It has received two thumbs up from all of our taste-testers.   4.5 from 2 reviews Mississippi Mud Cake   Print Prep time 15 mins Cook time 36 mins … [Read more...]

When it comes to infant products, I try to invest my money wisely.  I look for quality products that will last.  I research everything before I buy and always try to find the best value.  Two things I'm not willing to sacrifice quality on are car seats and high chairs.  I'm brand loyal when it comes to both of these products.  Our high chair of choice is the Stokke Tripp Trapp. We bought our first one when Bryson was a baby and started using it when he was right around one year old.  I had never saw one in person until we purchased ours, but I'm so glad that I picked the box up and brought  it home.  We loved it- we still do.  He's three now and we still use it daily.  It has held up to his messes and being pushed around the kitchen to help himself to the cabinets or watch us cook.  It's even held up to me using it a step ladder.  It's in almost constant use and when I take the time to scrub it down, it looks like new. In our first home, we didn't have a dishwasher.  Let's be clear: I hated washing dishes by hand.  So much so that I made a deal with Justin- if he would clean the dishes up after meals, he'd never have to touch the laundry.  For the most part, we kept that going until we sold that place.  When we found our current home, I was so excited to see a dishwasher.  And a laundry room.  Our first home didn't have a dedicated laundry room either- just a washer and dryer in a little nook in the hall.  Whew, what fun that was!  Not. I've gotten use to scrubbing dishes now and after changing dirty diapers all day, it's almost a welcome task.  Almost.  I definitely prefer to simply load the dishwasher and let it do the work, but we own several pots and pans that are just easier to hand wash. You are never too old for Hello Kitty.

I’ve loved Hello Kitty for as long as I can remember.  My mom would take me school shopping and I would pick out Hello Kitty pencils, backpacks, and clothing.  If it was made in a Hello Kitty design, I probably owned it.  My dad always said he thought I’d grow out of it.  Well, my dad isn’t wrong too often (hi, Dad!) but he was wrong about this.  I’m grown with a daughter of my own and I still adore all things Hello Kitty. When I saw the new line of products at Sparkle Bee from Marino Andriani, I had an internal debate.  Should I opt for a Hello Kitty lamp for Bella?  Should I go for the Hello Kitty toaster?  In my moment of mom selfishness (and if you are a mom, you know this doesn’t happen often) I chose to get what I wanted, so the toaster it is!  Now, I can definitely justify that by saying the entire family eats toast and having Hello Kitty staring back up may convince Bryson to eat more… or not.  FEATURES: • Toasts Hello Kitty Face on Every … [Read more...]

BEKA Bain Marie Review (Chocolate!)

Since giving up the microwave (something I’ve been meaning to post about) I’ve only melted chocolate once.  And it was a big flop.  I burned the chocolate and gave up on my dipped bananas in frustration.  I’ve worked with BEKA on a couple reviews before and I can honestly say that I LOVE their cookware.  I use both my Eco-Logic Pan and my Pancake Pan regularly.  Because I’ve had such success with their cookware lines, I jumped at the chance to try their Bain Marie.  All I could think about was being able to melt some chocolate without scorching it.   One of my favorite quick, sweet snacks is chocolate covered pretzels.  They have to be covered at home though.  The store-bought ones just don’t hit the spot for me.  Since we gave up the microwave in May, it’s been that long since I’ve had my chocolate covered pretzels.  I knew that was the first thing I wanted to make with my new Bain Marie. Play, Learn, & Snack with Dry Erase Placemats

I know that I’ve said it almost every post lately, but I’m going to say it again.  There is just something about age 2.  I never, ever thought I would love toddlerhood like this.  Watching Bryson take in the world around him, watching him explore, answering his questions, seeing his little mind ticking away with ideas- he amazes me everyday. We’ve started a little bit of learning lately.  Bryson thinks we are simply playing or coloring, of course, and that’s just the way I want it.  I want him to learn through his every day activities.  I want him to have a love of learning that doesn’t burn out.
