I started drinking coffee at a young age. My Gangan would always cook a big breakfast when I spent the night with her and she’d always fix me a cup of coffee. No one could make coffee like her and I always looked forward to it. I think it was more milk and sugar than anything, but it’s one of my favorite memories. I wanted “Gangan’s coffee” and only her coffee. I continued drinking my coffee with milk and sugar for years until I tried Coffee-mate French Vanilla creamer. Now, I normally don’t drink coffee at all if I don’t have my Coffee-mate French Vanilla to go with it.
When it comes to creating new recipes, I always look to Justin for help. We discussed ideas for a recipe that used Coffee-mate creamer as an ingredient and he suggested either pancakes or waffles. I was leaning toward some kind of dessert, but I welcomed his idea. Good thing I did, because I made these Fluffy French Vanilla Waffles Sunday morning and they were the best I’ve ever made. The Coffee-mate French Vanilla creamer adds just the right amount of sweetness and flavor.
- 2 eggs
- 2 cups all-purpose flour
- 1 cup milk
- ¾ cup Coffee-mate French Vanilla liquid creamer
- ½ cup vegetable oil
- 2 tablespoons sugar
- 4 teaspoons baking powder
- ¼ teaspoon salt
- Preheat waffle iron. Beat eggs until fluffy. Beat in all remaining ingredients until smooth.
- Spray waffle iron with non-stick spray. Pour mix onto waffle iron and cook until golden brown.
We were also challenged to make a coffee house drink with Coffee-mat creamer. I have never even been in a coffee shop much less actually purchased one of their drinks. Living in small town Alabama means we don’t have things like now. We have Waffle House and Huddle House, but that’s about the extent it. To get a feel for coffee house type drinks, I browsed the recipes at Coffee-mate.com to come up with ideas. I settled on a Coffee Frappe using Coffee-mate Peppermint Mocha creamer. Because I’ve never tasted a frappe from a coffee shop, I have nothing to compare this recipe too, but I highly doubt it could get any better. My husband and I were both so surprised at how much we loved this Peppermint Mocha Coffee Frappe! It will definitely be made and enjoyed again and again.
- 1 cup vanilla light ice cream
- 1 cup ice cubes
- 1 cup coffee, cooled to room temperature
- ½ cup milk
- 3 tablespoons Peppermint Mocha NESTLÉ COFFEE-MATE Liquid Coffee Creamer
- Whipped topping (optional)
- Cocoa powder (optional)
- Add ice cream, ice, coffee, milk, & creamer in blender. Cover and blend until smooth. Pour into a glass. Top with whipped topping (I used Reddi Wip) and a sprinkle of cocoa powder.
While the Coffee-mate French Vanilla creamer will always be my favorite, it is fun to experiment with the wide variety of flavors available. Now that I know how versatile Coffee-mate liquid creamers are, I’ll be trying them in new recipes often. Our Walmart was almost completely sold out of Coffee-mate creamer this weekend, so it seems that everyone else loves the seasonal flavors too. Coffee looks and smells delicious but it doesn’t have the greatest taste to me. I drink coffee probably once per year, and that’s when I need to stay awake through a boring presentation or such, lol. I have diabetes and coffee interferes with my insulin. It makes me jitter and everything else 🙁
I don’t see how people can deal with drinking pure black coffee, yuck! Then I know other people who use a thousands packs of sugar for their coffee, lol.
