Pepperoni & Cheese Pizza Muffins – Kid & Freezer Friendly Recipe

I seem to be on a “muffin” kick with the corn dog muffins and now these pepperoni & cheese pizza muffins.  You won’t believe how easy these are to make!  The first time I cooked them, I was stunned.  I love homemade pizza, but prefer to keep lunch simple and these give me my pizza fix for a lot less effort.  We may have eaten them for lunch and dinner and lunch again all in one week.  If that did happen, there was not a complaint one.  My husband actually raved about these.

A quick & easy alternative to homemade pizza that is kid & freezer friendly.

Ingredients
  • 1½ cups flour
  • 1½ teaspoon baking powder
  • 2 tablespoons Italian seasoning
  • 1½ cups milk
  • 2 eggs, lightly beaten
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cups cubed pepperoni
  • pizza sauce for dipping
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix flour, baking powder, and Italian seasoning in large bowl.
  3. Whisk in milk and eggs. Add mozzarella cheese, Parmesan cheese, and pepperoni and stir to combine.
  4. Let stand for 10 minutes to thicken up.
  5. Give the batter another stir, then pour into muffin pans.
  6. Bake for 25 - 30 minutes.
  7. Serve with pizza sauce.
Notes
Recipe yields 20 muffins. These do freeze well, simply allow muffins to cool completely and put in a freezer bag. I suggest you under-bake them a bit if you plan to freeze them. To reheat, bake them for about 20 minutes or until warmed through.

  • Yum. I pinned this too. I think I will make a week with “Muffin” dinners using your corn dog muffins, pizza muffins and some homemade banana muffins for a breakfast for dinner deal. I will have to go online to see if there are any other muffin recipes to round out the week. Ha!

  • I made these this morning & they are fabulous!!!! I am taking them as part of a meal to a new mama. They were very moist and held together wonderful after they were baked. The only changes I made were:
    I didn’t have mozzarella cheese so I used raw organic mild cheddar cheese & didn’t measure it, we love cheese so I am sure there is more than 2 cups, didn’t have parmesan so just didn’t use it. I sent my homemade pizza sauce for them to dip the muffins in. Next time I will add chopped jalapeno peppers & chopped bacon, my even add some cooked crumbled sausage (my oldest sons requests), will be more adult like since my kids are older and like spicy foods
