Menu Plan, Week of May 27

After 3 hours of fitful sleep, I decided to throw in the towel and face the morning… at 4:30AM.  Considering that I am not a morning person at all, even I am surprised.  It was just one of those nights where my brain refused to shut off.  It was another beautiful weekend and a long one at that.  I hope you had a fabulous Memorial day and took a bit of time to remember what it is really all about.  We spent time with our friends and family at the campground, out on the boat, relaxing and chatting and grilling, making memories, and checking things off our summer bucket list.


  • cereal
  • snacks on the boat
  • chicken wings, fries
  • s’mores for dessert


  • up late, skipped breakfast
  • hot dogs, cheese slices, & snacks at the river
  • grilled steak, chicken, & sausage kabobs


  • scrambled eggs with cheese, strawberry smoothies
  • macaroni & cheese, pinto beans, fish sticks (leftover kabobs for me)
  • grilled pork chops, mashed potatoes, green beans
  • watermelon for dessert


  • baked oatmeal
  • corn dog muffins (from freezer)
  • grilled chicken, veggies


  • strawberry muffins
  • chicken fingers, fries
  • 3 cheese lasagna (from freezer)


  • scrambled eggs with cheese, pancakes
  • southwest roll-ups (from freezer)
  • grilled rib-eyes or cook-out at the river


  • biscuit & gravy, eggs, sausage
  • snacky lunch
  • grilling at the river

    Hi, What is a corn dog “muffin”. Do you make them yourself (since it looks like a freezer recipe)? Souns like you would make a corn muffin mix and place chopped up hot dogs in to before baking. Is that right?
