We are having a “finish cleaning out the almost empty freezer” week at our house. I desperately need to go grocery shopping and plan to do that sometime this week. Until then, we are trying to use up what we have and get rid of expired food and food we won’t eat.
I did try a new breakfast recipe last week, the baked oatmeal that is linked below. It was seriously the best I’ve ever eaten and it’ll be on the menu often. It’s so easy to whip up and you can freeze it. One pan will last 2 to 3 meals, depending on if it’s just me & the kids or if someone else joins us. I also made some waffles to stick in the freezer. They taste great and reminded us of a funnel cake. I’ll share the recipe soon.

That’s all I have planned for this week. I can’t believe I’ve put off grocery shopping for so long & I look forward to having a full freezer again!
What are you having this week?
The baked oatmeal sounds fantastic. Thats all I eat in the morning before I head out to work. I can’t wait to get your recipe.
This is my dinner plan for the week:
Monday: Baked Chicken and vegetables
Tuesday: Goat Cheese Pizza
Wednesday: Pulled pork sandwiches and sweet potatoes
Thursday: Baked Chicken and vegetables
Friday: Hit up restaurant with friends
I love waffles from the freezer. They made great snacks also.
