How many of you added some form of “get healthier” to your list of new year’s resolutions or goals? *raises hand* Yep, me too. I refuse to restrict myself from foods I love though. Everything in moderation, I say. Let me tell you, I love some pork. My husband is pretty much a magician when it comes to pork, but we don’t always eat it in the healthiest ways. Thanks to the “Good and Good for You Challenge” – that’s changing now. We are learning new ways to cook pork, new cuts to buy, and trying new recipes.
The “Good and Good for You Challenge” is a mission to help inspire healthy diets and lifestyles in the new year. The National Pork Board is asking folks to take a pledge to eat healthy throughout 2012. To kick-start the effort, I’ve joined several other bloggers to take part in a 4 week challenge from January 26th through February 22nd. Each week, I’ll share a new recipe along with the weekly Publix pork special. At the end of the four week challenge, I’ll offer a giveaway that includes great products and coupons for free pork!
This week, the pork tenderloin is on sale for $4.99 per pound so we are trying a new recipe with it.
Pork Tenderloin Sliders on Sweet Rolls
Prep time: 20 minutes
Cook time: 3 minutes
Makes 12 servings
Ingredients:
1 pork tenderloin (1 pound), trimmed
1 teaspoon seasoning (we used minced onion, garlic, and cumin)
2 teaspoons olive oil
12 sweet rolls, split and toasted (King’s Hawaiin)
6 romaine lettuce leaves, torn
2 plum tomatoes, sliced
Directions:
Slice pork about 1/2 inch thick. Sprinkle on all sides with seasoning(s). Heat the olive oil in a large skillet over medium-high heat. Add the pork and cook, turning once, until browned, and 1 1/2 minutes on each side.
Place the tenderloin in the rolls, top with lettuce, tomatoes, and sauce.
Spicy Avocado Sauce
Ingredients:
1 small ripe avocado, halved, pitted, and peeled
1 tablespoon minced jalapeno, including seeds
1 tablespoon lime juice
2 teaspoons minced fresh cilantro
Directions:
Place the avocado in a small bowl and mash. Add jalapeno, lime juice, and cilantro; stir until all ingredients are mixed well.

I like the sliders idea although I’m not sure about the spicy avocado sauce. Nice puce!

we made these on Friday but with a yogurt lime sauce. Next time my husband already suggested we try the avacado sauce! Your picture looks a million times better than mine does, lol.
Yum! The sauce looks good enough to eat by itself.
I actually think it would probably be good on tortilla chips or maybe even crackers!
Those are next on my list (although I’d probably just buy some ready made spicy guacamole to use)

Sliders are a great way to get kids to eat. I don’t know if my daughter would go for the avocado (more for mommy), but leave that off and she’d eat up those sliders. Great idea.
