Banana Chocolate Chip Muffins (Tasty Tuesday)

A few weeks ago, I had a couple spoiling bananas and a sweet tooth.  I searched for recipes that would solve both of those “problems” and quickly realized that I didn’t have all of the ingredients needed to make most of them.  Instead, I threw this recipe for Banana Chocolate Chip muffins together and it turned out to be one of my favorites.  It is super moist and delicious!

 

Banana Chocolate Chip Muffins

Ingredients Needed:

  • 1¾ cups all-purpose flour
  • ¾ cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ salt
  • 1 egg
  • ½ vegetable oil
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 mashed bananas
  • 1 cup semisweet chocolate chips

In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. In another bowl, combine the egg, oil, sour cream and vanilla. Stir into dry ingredients just until moistened. Fold in bananas and chocolate chips. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 22-25 minutes or until a toothpick comes out clean.

Makes 16 muffins.

These can be frozen and reheated in the microwave.
